Co-Founder & Executive Director
Named one of the Top 50 Most Inspiring People in Hospitality & Travel by the International Hospitality Institute in 2025, Meredith has trained hospitality professionals in over 30 countries, from boutique hotels to global brands. She specializes in developing profitable plant-forward menu strategies that resonate with all guests and position establishments to confidently attract vegan and eco-conscious travelers.
With a master's in social work and a background in behavioral psychology, she brings a unique lens to hospitality, designing scalable solutions that reduce food-related emissions while enhancing guest experience. Her expertise has been featured on television, podcasts, in-flight magazines, and popular vegan travel platforms.
Hayley Cooper
Co-Founder & Global Operations Director
With 25 years of hospitality management experience, Hayley pioneered the Vegan Hospitality movement across Africa as the continent's first Certified Vegan Hospitality Consultant. Based in Greater Kruger, South Africa, where she co-managed a luxury 5-star safari lodge for 12 years, she has helped establish Africa as a destination with Vegan Hospitality Certified properties.
Her expertise is regularly featured in print media and podcasts. She has authored courses and e-books on hospitality and veganism, drawing from her passion for animal rehabilitation and sustainability. Hayley is known for delivering personalized, professional service and sharing her expertise with hospitality leaders across the continent.
Oana Puiu
Program Coordinator
Based in the Netherlands, Oana holds a Bachelor's in International Hospitality Management from NHL Stenden University and brings hands-on experience in plant-forward dining across hotels and resorts. She has served as a plant-based hospitality coach for Groene Schatten, an Amsterdam City initiative helping restaurants reimagine plant-rich dishes rooted in their own culinary traditions — work that has been featured in Dutch press outlets including Het Parool.
As Program Coordinator, she guides hotels and resorts through the vegan hospitality certification process, helping properties translate their commitment to vegan-inclusive hospitality into a recognized standard that guests trust, staff feel confident delivering, and the industry is increasingly looking for.
